I wasn’t a finalist because of credentials, titles, or decades in fine dining. I was here because of one thing: reaction. The kind that comes from real guests tasting something that hits home.
While the other chefs brought incredible artistry—plates that were stunning, technical, even world-class—
I brought something different. A dish that people remember. See, the competition was about Signature Dishes. That word—“signature”—means more than just fancy. It means identity. Something that defines a place, or a person, or a people.
My Honey Orange Cassava Cake wasn’t the flashiest. It didn’t speak French. But it spoke to people. It spoke Florida. The ingredients—local honey, fresh citrus, and humble cassava—came together like the communities that make this state what it is. Diverse. Bold. Familiar.
